DAVAO SIGNATURE

In Davao, in the southern Philippines, this centralized fermentation operation delivers consistently excellent cacao.

Local social enterprise and specialty chocolate maker Auro works with more than 300 cacao producing families across over 500 hectares in Davao, in the south of the Philippines. Auro offers technical assistance and trainings to farmers, including cacao nursery development and farmer rewards and livelihood programs.

Growers typically intercrop cacao with coconut, durian, banana, and other fruit trees. Culturally, cacao is enjoyed in the Philippines as a hot drink known as “sikwate” or “tablea.” Auro’s work in the Philippines led to the first ever Cocoa of Excellence award for the country.

The farms in the Davao Signature blend are located close to beautiful Mount Apo National Park, and Auro’s team works to promote agroforestry and organic farming to increase biodiversity and protect remaining forest across the Philippines.

TERROIR

The Davao region, southeast Philippines: Trinitario types grown in a wet tropical climate with a single long harvest window.

The Philippines was the first country in Asia to grow cacao, after Mexican Criollo seeds arrived in the 1700s and conditions turned out to be perfect: a tropical and humid climate, with annual rainfall of ~2,200 mm spread evenly throughout the year and rich volcanic soil.
