AMAZONAS UTKKU

An exceptional award-winning cacao grown by a women-led cooperative along the Utcubamba River in northern Amazonas.

The cooperative CEPROAA sources from around 250 families, 32 of whom work with native heirloom red and yellow Criollo varieties from the Amazonas region. The cooperative applies a special harvest and post-harvest protocol to preserve the delicate character of the native cacao. The Utkku lot is comprised entirely of cacao from these 32 families.

Cily and her team at CEPROAA have developed unique approaches to value creation and preservation for the families in their cooperative, over 70 of which are led by women farmers. The cooperative upcycles cacao byproducts into flour, and also produces their own specialty chocolates under the UTKKU brand. The exceptional native genetics, its special post-harvest treatment, and its journey through the rugged Andes mountains make this fragrant Utkku cacao incredibly special and memorable.

TERROIR

The Cajaruro district of Amazonas, on river terraces below the cloud forest, planted to native and hybrid varieties.

Seven days in wooden boxes, pre-drying and then sun-drying on wooden tables, keeps the volatile top notes intact: kumquat and paradise apple over vanilla, with ylang ylang lifting the finish. Organic certified.
